Holding temperature and presentation
Gelato and ice cream are unforgiving about temperature. A display running a few degrees warm loses structure within a service; a few degrees cold and it will not scoop. Look for cabinets with tight temperature control and even air distribution rather than the largest pan count you can fit.
If you produce on site, a blast chiller does more than speed things up. Pulling product through the critical temperature band quickly protects texture in custards and mousses and keeps you compliant on cooling times.
